pH: 3.4

Acidity: 5.6 mg/L

Aging potential: 4-6 years

Organoleptic Characteristics:

Palate: The strong tannins, high in nipping acidity, the rich aromatic intensity of the olive, the ripe tomatoes and bitter chocolate, all stand out. The wine leaves a seductive and velvety taste lifting to the surface fruity elements. The note of oak, the sense of pepper and clove, linger in the mouth with an almost bitter aftertaste.

Food Pairing: This wine can accompany a very wide range of foods: risotto, strongly flavoured dishes such as meat pies, lamb or goat and fatty foods. It may also be served with grilled foods, red meats and game as well as with strong and spicy salads. Best served at 16-18° C. Ideally, it should be ventilated in a decanter for 30 minutes.
