The most beautiful Nereid (goddess of the sea), who possessed the ability to change forms. The mother of the Greek mythical hero Achilles who became invincible because of her.

Type: Semi-dry Blanc de Noir

Grape Variety: Xinomavro 100%      

Vineyards: Viticultural region of Naoussa, Northwest Macedonia, Greece

Harvesting: Hand-picked in mid to late September

Vinification / Maturation: White wine vinification of the red Xinomavro variety; under the Commission regulation (EC) No 606/2009. The grapes are carefully crushed, without pressure, in order to obtain the first juice. Then, alcoholic fermentation takes place in stainless steel vats at 16-18° C.

Alcohol: 11.5% vol.

Organoleptic Characteristics:

Eyes: Bright yellow with faded rose highlights.

Nose: Very condensed aromas of citrus, donuts and notes of black pepper are found.

Palate: Aromas of ripe fruits and mineral characteristics dominate while the wine is quite light bodied. The combination of a slightly bitter taste and bright acidity balances with the very few sugars of Thetis and make for a very pleasant drinking experience.

Food Pairing: This wine can be combined with fatty and rich dishes due to the strong acidity and the background texture of the red Xinomavro. However, it is also an ideal accompaniment for seafood, white meat, grilled fish and pasta. Best served at 10-12° C. It will positively surprise you as an aperitif.
